Mediterranean Chicken Pasta Salad is a refreshing and satisfying dish combining tender chicken, pasta, crisp vegetables, olives, feta cheese, and a light lemon olive oil dressing inspired by Mediterranean flavors.
3 cups cooked rotini pasta
2 cups cooked chicken breast, diced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/3 cup red onion, thinly sliced
1/2 cup Kalamata olives, sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
Dressing
1/4 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 garlic clove, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook pasta in salted boiling water until just tender. Drain and cool.
Season chicken with salt, pepper, and oregano, then cook in a skillet with olive oil until fully cooked. Rest and dice.
Slice tomatoes, dice cucumber, and thinly slice red onion.
In a small bowl whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
Place cooled pasta in a large bowl. Add chicken, tomatoes, cucumber, olives, and onion.
Pour dressing over the salad and toss gently.
Add feta cheese and chopped herbs. Toss lightly again.
Chill for about 30 minutes before serving for deeper flavor.
