4 large flour tortillas
2 cups fresh spinach, washed and chopped
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 medium red onion, thinly sliced
1 tablespoon olive oil, plus extra for cooking
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
Optional: fresh basil leaves for garnish
Optional: tzatziki sauce or hummus for serving
Wash and chop spinach, slice red onion, crumble feta, and shred mozzarella. Preheat skillet over medium heat with olive oil.
Sauté red onion with salt and olive oil until soft and lightly caramelized, 5–7 minutes.
In a bowl, combine spinach, feta, mozzarella, garlic powder, black pepper, and oregano. Mix well.
Spread 1/4 of the filling on half of a tortilla, fold, and press edges gently.
Cook tortilla in skillet 3–4 minutes per side until golden and cheese is melted.
Repeat with remaining tortillas and filling.
Slice quesadillas into wedges, garnish with basil, and serve with tzatziki or hummus.
