Description: Mediterranean-inspired quesadillas with spinach, feta, mozzarella, and red onion, perfect for lunch or a light dinner.

Ingredients

4 large flour tortillas
2 cups fresh spinach, washed and chopped
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 medium red onion, thinly sliced
1 tablespoon olive oil, plus extra for cooking
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
Optional: fresh basil leaves for garnish
Optional: tzatziki sauce or hummus for serving

Instructions

  • Wash and chop spinach, slice red onion, crumble feta, and shred mozzarella. Preheat skillet over medium heat with olive oil.

  • Sauté red onion with salt and olive oil until soft and lightly caramelized, 5–7 minutes.

  • In a bowl, combine spinach, feta, mozzarella, garlic powder, black pepper, and oregano. Mix well.

  • Spread 1/4 of the filling on half of a tortilla, fold, and press edges gently.

  • Cook tortilla in skillet 3–4 minutes per side until golden and cheese is melted.

  • Repeat with remaining tortillas and filling.

  • Slice quesadillas into wedges, garnish with basil, and serve with tzatziki or hummus.
