Skillet tortillas filled with spinach, feta, mozzarella, and red onion, cooked until crisp with a tender melted interior.

4 flour tortillas
1 1/2 cups spinach leaves, chopped
1/2 cup feta cheese, crumbled
1 cup mozzarella cheese, shredded
1/2 red onion, thin slices
1 garlic clove, finely chopped
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Warm olive oil and soften red onion in skillet.
  • Stir in garlic and spinach until reduced and tender.
  • Set mixture aside briefly for cooling.
  • Distribute mozzarella, spinach mixture, feta, and seasoning across tortilla.
  • Fold tortilla and press lightly.
  • Heat in buttered skillet until both sides crisp.
  • Rest briefly, slice into wedges, and serve.
