Mediterranean stuffed sweet potatoes feature roasted sweet potatoes filled with seasoned chickpeas, fresh vegetables, herbs, olive oil, and a light cheese topping for a balanced and satisfying meal.

2 large sweet potatoes
1 cup chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, sliced
1/3 cup Kalamata olives, sliced
1/2 cup feta-style cheese, crumbled
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley

Instructions

  • Bake sweet potatoes at 400°F for 45–55 minutes until soft.
  • Warm chickpeas in olive oil with oregano, salt, and pepper.
  • Mix tomatoes, cucumber, onion, olives, parsley, lemon juice, and olive oil.
  • Slice and fluff baked sweet potatoes.
  • Fill with chickpeas, vegetables, and cheese.
