Quick & Easy Homemade Butter Chicken is a creamy and flavorful Indian dish with tender chicken in a rich, spiced tomato sauce.

1.5 pounds boneless chicken thighs, cut into bite-sized pieces
3/4 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ginger paste
2 teaspoons garlic paste
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon chili powder or cayenne
1 teaspoon garam masala
1 teaspoon salt, or to taste
1/2 teaspoon black pepper
3 tablespoons butter
1 large onion, finely chopped
1 can (14 ounces) crushed tomatoes
1/2 cup heavy cream
1/4 cup chopped fresh cilantro, for garnish
1 teaspoon dried fenugreek leaves (optional)

Instructions

  • Combine yogurt, lemon juice, ginger paste, garlic paste, cumin, coriander, turmeric, chili powder, garam masala, salt, and black pepper in a bowl. Add chicken and coat well. Refrigerate 30 minutes to 4 hours.

  • Heat 2 tablespoons butter in a skillet over medium heat. Sauté onions until golden brown, 5–7 minutes.

  • Add marinated chicken and cook 5–6 minutes until lightly browned. Remove chicken and set aside.

  • Add remaining butter to the skillet. Pour in crushed tomatoes and simmer 10–12 minutes until thickened. Stir in cream and optional fenugreek leaves.

  • Return chicken to skillet, coat in sauce, and simmer 8–10 minutes until fully cooked. Adjust seasoning as needed.

  • Garnish with fresh cilantro and serve immediately.
