Quick & Easy Homemade Butter Chicken is a creamy and flavorful Indian dish with tender chicken in a rich, spiced tomato sauce.
1.5 pounds boneless chicken thighs, cut into bite-sized pieces
3/4 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ginger paste
2 teaspoons garlic paste
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon chili powder or cayenne
1 teaspoon garam masala
1 teaspoon salt, or to taste
1/2 teaspoon black pepper
3 tablespoons butter
1 large onion, finely chopped
1 can (14 ounces) crushed tomatoes
1/2 cup heavy cream
1/4 cup chopped fresh cilantro, for garnish
1 teaspoon dried fenugreek leaves (optional)
Combine yogurt, lemon juice, ginger paste, garlic paste, cumin, coriander, turmeric, chili powder, garam masala, salt, and black pepper in a bowl. Add chicken and coat well. Refrigerate 30 minutes to 4 hours.
Heat 2 tablespoons butter in a skillet over medium heat. Sauté onions until golden brown, 5–7 minutes.
Add marinated chicken and cook 5–6 minutes until lightly browned. Remove chicken and set aside.
Add remaining butter to the skillet. Pour in crushed tomatoes and simmer 10–12 minutes until thickened. Stir in cream and optional fenugreek leaves.
Return chicken to skillet, coat in sauce, and simmer 8–10 minutes until fully cooked. Adjust seasoning as needed.
Garnish with fresh cilantro and serve immediately.
