Smoky chipotle-marinated chicken, black beans, fresh veggies, and a creamy lime yogurt sauce come together in this hearty, high-protein burrito bowl perfect for lunch or dinner.
1.5 lbs boneless skinless chicken thighs or breasts
1–2 chipotle peppers in adobo, minced
1 tbsp adobo sauce
2 tbsp olive oil
2 cloves garlic, minced
Juice of 1 lime
1 tsp cumin
1/2 tsp salt
3 cups cooked brown or white rice
1 cup canned black beans, rinsed and drained
1 cup corn (grilled, canned, or frozen)
1 cup cherry tomatoes, halved
1 avocado, diced
1/4 cup chopped fresh cilantro
1/4 small red onion, thinly sliced
Lime Yogurt Sauce:
1/2 cup plain Greek yogurt
Juice of 1/2 lime
Pinch of salt
Mix chipotle peppers, adobo sauce, oil, garlic, lime juice, cumin, and salt.
Add chicken and marinate for at least 30 minutes.
Heat a skillet and cook chicken 5–7 minutes per side. Rest and slice.
Warm rice and prep all toppings.
Combine yogurt, lime juice, and salt to make sauce.
Build bowls with rice, chicken, beans, veggies, and sauce.
Serve immediately with lime wedges and optional toppings.
