1 lb boneless skinless chicken thighs, sliced
6 cloves garlic, minced
8 oz thick noodles (lo mein, udon, or yakisoba)
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp honey or brown sugar
2 tsp neutral oil
2 scallions, chopped
1 tbsp sesame seeds
Cook noodles according to package directions. Drain and set aside.
Heat oil in a large skillet or wok over medium-high heat. Sear the chicken until browned and cooked through. Remove and set aside.
Reduce heat, add garlic, and sauté until fragrant.
Combine soy sauces, oyster sauce, and sweetener in a bowl. Pour into the pan and simmer briefly.
Add chicken and noodles to the sauce. Toss everything together until well coated and heated through.
Garnish with scallions and sesame seeds. Serve hot.
