Vegetable Irish Pasties are flaky, golden hand pies filled with a blend of potatoes, carrots, rutabaga, and herbs for a warm, hearty, and savory meal.

Ingredients

2 cups all-purpose flour
1/2 teaspoon salt
10 tablespoons cold unsalted butter
6–8 tablespoons ice water
2 medium potatoes, diced
1 medium carrot, diced
1/2 cup diced rutabaga
1 small onion, chopped
2 tablespoons butter
1 teaspoon fresh thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 egg, beaten

Instructions

  • Mix flour and salt in a bowl.

  • Rub in cold butter until mixture is crumbly.

  • Gradually add ice water until dough forms.

  • Wrap and chill dough for 30 minutes.

  • Dice vegetables and mix with seasoning.

  • Preheat oven to 375°F.

  • Roll dough into four circles.

  • Add filling and butter cube to each circle.

  • Fold and seal edges.

  • Brush with beaten egg and slit for steam.

  • Bake 40–45 minutes until golden.

  • Cool 10 minutes before serving.
